This recipe is simply too easy and too good not to share (even though Sexy Hubby has informed me repeatedly, I am not a food blogger, and that I shouldn’t post recipes. I have created a monster. Seriously, a small amount of notoriety and I can’t be in the same room as him.)
Note: one of the things I adore about this recipe, it’s made with simple stuff that you already have in your pantry. Also, for those who don’t cook very often – here’s the rub, I hardly ever follow a recipe exactly. Usually the first time I actually measure every single thing, then after that, I guesstimate.
Also, if I don’t have a single ingredient or two, I either skip it or substitute. Some say that’s bastardizing a recipe – I say it’s the lazy wife’s way to keeping Sexy Hubby happy.
Grilled Chicken with Spice Rub
1 Tablespoon dried thyme
1 Tablespoon dried oregano
1 Tablespoon ground cumin
1 Tablespoon paprika
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
Approx. 3 lbs. chicken. Recipe calls for thighs, but I used breasts tonight. One note: Sexy Hubby doesn’t like thick breasts (!) so I always slice them in half so they are nice and thin and tender.
Combine dry ingredients. Rinse chicken, pat dry. Rub mix on breasts, place in zip-lock bag, seal and chill 4 hours (again, I did NOT do this part. I was in a hurry. So I rubbed the breasts and put directly on the grill.)
Grill meat medium-high heat for 8 to 10 minutes per side. Serve with White Barbecue Sauce (recipe to follow.)
White Barbecue Sauce
1 1/2 cups mayo
1/2 cup white wine vinegar
1 garlic clove, minced (I used the kind already minced in the jar in the fridge.)
1 Tablespoon coarse ground pepper
1 Tablespoon spicy brown mustard (didn’t have this, used what I had instead.)
1 teaspoon sugar
1 teaspoon salt
2 teaspoons horseradish (didn’t have this, didn’t substitute anything.)
Mix all ingredients until blended. Store in airtight container for up to one week.
Voila.
